The bright yellow grain has a mild, nutty flavour. It’s packed with nutrients and is a great source of fibre and protein.

In China, millet is used to make cakes and bread. It can also be cooked like rice and served as a side dish.

You can make a simple millet congee on the stovetop or in a rice cooker. This porridge-like dish is warm and nourishing, especially on cold winter mornings.
