Brush the thick syrup over meat and fish before grilling. The fruity sweetness and sharp tang cuts through rich meats like lamb and duck. You can also use it as a finishing drizzle for roasted vegetables.

Pomegranate molasses works beautifully in desserts, too. Use it sparingly so it doesn’t overwhelm the other ingredients. It’s wonderful with yoghurt or a fresh fruit salad. You can even use it to flavour ice cream.
