Serve Sichuan sweet potato noodles in a spicy broth flavoured with chilli bean paste. The flat, wide noodles will soak up the fiery flavours.

These noodles are a popular choice for Chinese hot pot. They are usually added at the end of the meal to slurp with the broth. They retain their bite, even after sitting in the hot soup.

Sweet potato noodles have a springy, chewy texture. You can serve them hot or cold with your favourite sauces. They are delicious with a splash of soy sauce, rice vinegar and chilli oil.
